Healthy Blueberry Muffins

  • Ingredients:
    • 1 cup unsweetened almond milk 
    • 1 tsp apple cider vinegar 
    • 1 cup all-purpose flour 
    • 1 cup oat flour
    • 2 ½ tsp baking powder 
    • ½ tsp salt
    • ¼ tsp sodium bicarbonate
    • ½ cup + 2 tbsp organic cane sugar
    • ¼ cup + 2 tbsp coconut oil 
    • 1 tsp vanilla extract 
    • lemon zest (optional)
    • 1 ½ to 2 cups of blueberries
  • Procedure:
    • Mix the almond milk and vinegar, let it stand for 5 mins. 
    • In a large bowl mix the dry ingredients. 
    • In another bowl mix the sugar, oil, vanilla and lemon zest.
    • Now add the milk and vinegar mixture. 
    • Incorporate the wet mixture with the dry one and mix. Add the blueberries, fill your muffin tin. 
    • Bake for 20-25 mins at 180C / 350F, let cool and voila!
