- Ingredients:
- 1 cup unsweetened almond milk
- 1 tsp apple cider vinegar
- 1 cup all-purpose flour
- 1 cup oat flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ¼ tsp sodium bicarbonate
- ½ cup + 2 tbsp organic cane sugar
- ¼ cup + 2 tbsp coconut oil
- 1 tsp vanilla extract
- lemon zest (optional)
- 1 ½ to 2 cups of blueberries
- Procedure:
- Mix the almond milk and vinegar, let it stand for 5 mins.
- In a large bowl mix the dry ingredients.
- In another bowl mix the sugar, oil, vanilla and lemon zest.
- Now add the milk and vinegar mixture.
- Incorporate the wet mixture with the dry one and mix. Add the blueberries, fill your muffin tin.
- Bake for 20-25 mins at 180C / 350F, let cool and voila!
